TapouT is probably the largest MMA clothing brand in North America. Many MMA fighters are sponsored by TapouT. A "tap out" is also a way to signal that one has had enough and wants to quit the fight, and does so by tapping his opponent or the mat. This is usually done when in a submission hold. The clothing brand took their name from the action.
The UFC is the largest MMA promotion in North America, and probably the world. You can find most of these fighters on Youtube, either in highlights or in full fights. The rules are different for some MMA organizations: some will allow you to kick, knee, or stomp the head of an opponent who is on the ground, some will outlaw elbows, some earlier matches were bare knuckle, some allowed head-butts, and so on.
